Thanksgiving With Domino

The last Domino Magazine had an amazing article on creating Thanksgiving dinner in about an hour! The recipe for the turkey was fast and easy and made the best tasting turkey I've ever had. Seriously.

Try it!





Thyme-Roasted Turkey
serves: 8

2 boneless turkey breast halves, skin on, 2.25 lbs each

2 turkey drumsticks, about .75 lbs each

2 tbsp. olive oil

1 tbsp. dried thyme

1 tbsp. coarsely ground salt

2 tsp. coarsely ground black pepper

Preheat oven to 500. Place the turkey pieces on a rimmed baking sheet. Rub them with olive oil, then sprinkle on all sides with thyme, salt, and pepper. Make sure breasts are skin side up and spread out as much as possible, without touching any of the other pieces. Cook in middle rack of oven for 50 minutes.


Cassidy's Tips:

1. Turkey breast halves were not available. We used 2 whole turkey breasts, instead, and no drumsticks. They sat high on the baking pan, so Andrew had to make them shorter and spread them out. It was all too gross for me.

2. With 2 whole breasts, we added 20 minutes to the cooking time which worked perfectly!

3. Warning: the house will likely fill with smoke as the oil and spices that fall to the baking sheet burn quickly at such high temperatures.

4. Warning: your baking sheet will never be the same.

5. We had 8 for dinner and still had plenty of leftover turkey! So it makes lots.

6. Best of all, no disgusting turkey innards to deal with. Yeah, my favorite part!

that's awesome... and successful... though to this pregnant person, inwards or no, I don't think I'll be doing the turkey this year! But it does sound like my kind of recipe actually, and when I'm not feeling queezy, I'll jot it down! :)

I am seriously craving blueberries... cheese cake... and actually now that you 've mentioned it... turkey, cooked well, doesn't sound too bad.

I love you. have a good thanksgiving with friends and family. I'm thankful for you, Cass. And always will be.

Oh, and Andrew, I'm pretty grateful for you too!

Sounds wonderful. I didn't even attempt a turkey this year but now I might. The ham that your mom told me about and got me hooked on from Costco a few years ago is all we did this year as far as meat. I tell you what, we are still eating it. Thanks for the recipe.

Cass, the kids have been playing, 'okay, you're Aunt Cassidy and I'm Andrew. I'll drive the car and then I'll call you on the phone.' All on their own they came up with this stuff. These kids are out of my league.

Cassidy,

My Greek friend has a recipe very like this one. You marinate the turkey in lemon juice, olive oil & Cavender's Greek Seasoning. She buys the breast together like yours was, but chops them in half with her hatchet, er, cleaver. This helps it cook faster, 30 mins, she says. I don't have a cleaver, so I buy them already cut, but have never got them done in 30 min.
